Did you know? Caponata takes its name from the “capone” — the Lampuga fish, very common in the Mediterranean — that Sicilian nobles ate in sweet-and-sour sauce. The common people, unable to afford fish, replaced it with eggplant, while keeping the same sweet-and-sour sauce. A luxury dish reimagined with humility and genius. Typically Sicilian.
